Mini Maple Chocolate Chip Pancake Muffins (Recipe)
I’ve been swamped with work lately, but I finally found a spare moment to bake something! Not only are these mini muffins easy to make, but they’re also tasty and super adorable. Here’s hoping I don’t eat them all in one sitting!

Martha Stewart’s rustic nectarine tart: really yummi!
I have quite a few days off in the coming weeks and I definitely plan to make this during one of them (once I translate the recipe haha)!

White Sangria Sparkler
You’ll need:
- 1-2 bottles of crisp white wine, I used 1 bottle Sauvignon Blanc and 1 bottle of sparkling Vino Verde
- 2 ripe local peaches, sliced
- 1 pint raspberries
- 2 kiwis
- several sprigs of mint
- Stevia
Simply add the sliced fruit and mint to the wine and add several squirts of Stevia until desired sweetness is reached. Let sit for at least an hour in the fridge to let the flavors infuse. In the summertime it’s also nice to freeze half of the fruit and add right before serving so they act as ice cubes in the Sangria.
Oooh…a drink for the next patio party, perhaps?

Strawberry Sunflower Pops
These seem a bit labor intensive for my lazy summer attitude, but they do look delicious and healthy.
INGREDIENTS 1/3 cup shelled unsalted sunflower seeds 3 cups hulled and halved strawberries 3/4 cup strawberry juice 3/4 cup pineapple juice 3 tablespoons sugar 1 ripe banana
PREPARATION Heat oven to 300°. Roast sunflower seeds in a shallow pan for 6 minutes; stir and roast 4 minutes more. Simmer berries, juices and sugar in a medium saucepan for 5 minutes. Let cool. Transfer mixture to a blender; add banana; blend until smooth. Stir in seeds. Fill molds and add sticks. Freeze 6 hours.
Ooh, a healthy way to beat the heat!

I haven’t had much time to bake or cook lately because of work, but when I do get a spare moment, I think these cannoli cupcakes with marsala chocolate whipped cream and mini cannoli may be my next endeavour. Or at least the mini cannoli :)

This looks like a terrific summer drink. If only I could remember where my pesky blender is…
Sunshine Slush is the perfect frozen summer drink. Cool off with this blend of frozen fruit and juices. It would make a great cocktail, too.

Toffee Chocolate Chip Cookies (Recipe)
Just to prove that I ended the cupcake spree, I made these for the ride up to the cottage :P Last time I made these, my boyfriend ate five in one sitting!
I think the best part of this recipe is that you don’t need to use the electric mixer at all…there’s just something gratifying about using a good ol’ wooden spoon. That and it makes washing dishes far less complicated!
